Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. Place the chocolate chips and honey in a microwave-safe bowl and microwave in 30-second intervals, stirring each time, until the mixture is smooth and glossy.
  3. While the chocolate melts, lightly toast the peanuts in a dry skillet over medium heat for about 3-4 minutes until fragrant and golden, then let them cool slightly.
  4. Pour the toasted peanuts into the melted chocolate mixture, add vanilla extract and a pinch of salt, then stir until the peanuts are evenly coated with the chocolate.
  5. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared parchment-lined sheet, pressing down gently to flatten if desired.
  6. Let the clusters set at room temperature for about 30 minutes, or refrigerate for 15 minutes until firm and shiny.
  7. Once set, peel the clusters from the parchment paper and store in an airtight container at room temperature or in the fridge for up to a week. Enjoy these crunchy, sticky bites whenever cravings hit!

Notes
